Martin Coad started home brewing in 2006, with a kit that his girlfriend purchased for him for Christmas. He then proceeded to spend all his free time reading and perfecting his art. Next, he worked at a local homebrew store, Brew and Grow on Kedzie in Chicago. Here he had the opportunity of working side-by-side with the head brewer for the chain, with more than 15 years of brewing experience, and a strong pension for brewing theory. From there, he was the brewmaster for Hofbräuhaus Chicago, where he worked with the international technical director of brewing for Hofbräu and learned all about German brewing traditions and techniques. He then led the brewery to be the highest volume brewpub in the Chicago area in 2013. Martin opened Greenstar Brewing at Uncommon Ground in July of 2014, and following the restaurant’s 25-year commitment to sustainability, led the process to become certified organic.
