Corey Laub moved to Chicago in June of 2016 looking for the perfect opportunity for his career, and has found it as the Executive Chef of NOVO. Before finding his way to Chicago, he spent years working for restaurants in the D.C area. Chef Laub spent time at Aida Bistro, Wine Market, 701 Restaurant, Firefly, Beuchert’s Saloon, and most recently at Lincoln. At just 26 years old, Corey’s cooking style revolves around seasonal produce, local proteins, and bold flavors.
Born and raised in Columbia, Maryland to Jeff and Shelley Laub, Corey spent his youth playing baseball and basketball, while learning to appreciate all the styles of food in the greater D.C. area. After starting his hospitality career as a server, while attending University of Mary Washington, at age 17, a local sports bar needed help in the kitchen and Corey jumped at the opportunity. From the first day in the kitchen he knew that cooking was the passion and outlet he had always been looking for. Corey moved back to Columbia, and started cooking at Aida Bistro, while going to school at the Hotel, Culinary Arts, and Tourism Institute, at Anne Arundel Community College. Corey comes to NOVO with passion for food and a drive to make every guest of the restaurant satisfied.
